CSA Harvest Guide : June 30

6/29/2011: I just returned from a four day trip and I am amazed at how much the garden has changed! The summer squash is riddled with flowers, the tomatoes are up to my knees, and the green beans were picked for the first time. We've uncovered the watermelon and could not be more pleased with how they look. Though it is hard not to get excited about future harvests, lets take a look at what we hope to harvest for you tomorrow morning:

Green Onions, Potatoes, Carrots, Peas, Kohlrabi, Beans, Mint, and Lavender.

Vegetable Description Washing/Storing General Use
Potatoes Look forward to receiving all red potatoes in your bag this week.. A potato is a living organism: if it is stored in warm conditions, it will grow; if it is too cold, it will freeze; if there is too much light, it will green up. They should be kept in a cool, dry area away from light. A cellar is an ideal spot for potatoes. Do not keep them in the fridge. It will keep them too cold and turn the starch into sugar. They will store 1 - 2 weeks at room temperature and several weeks (I have read they can keep for 3-6 months) at 45-50 degrees. Potatoes fresh from the garden will always keep longer. Store them away from onions and fruit.
Potatoes are versatile. A section describing the ways you shouldn't eat a potato (raw, maybe?) would be a shorter column. Enjoy them scalloped, baked, fried, mashed, roasted, sauteed, grilled, boiled, braised, peeled, halved and gutted to make potato skins, as a salad, as a casserole, potato au gratin, etc.
Mint Mint is an aromatic and flavorsome herb. Snip the ends (treat it like a flower). Store it in a vase with the ends submerged in water. If you need it to last more than a couple days: store it in an airtight container and place it in the fridge. Mojitos. Also, its sweet smell can be utilized as an air freshener or simply for decoration.
Lavender The oil in lavender's small, blue-violet flowers gives the herb its fragrant scent. Research has confirmed that lavender produces slight calming, soothing, and sedative effects when its scent is inhaled. This herb has also been used as a remedy for a range of ailments from insomnia and anxiety to depression and fatigue.

Lavender Cookies:

Ingredients:

-2 sticks butter or margarine, room temperature
-1 cup granulated sugar
-1/2 tsp. salt
-2 eggs, well beaten
-2 tsp. pure vanilla extract
-1 tsp. dried lavender buds
-2-1/2 cups all-purpose flour

Method:

Cream the butter, sugar, and salt until light. Add the beaten eggs and vanilla. Mix well. Add in the flour using low speed just until the dough is starting to form. Sprinkle in the lavender fold in gently. Divide the dough into two rounded sections. Wrap well in plastic wrap and chill for at least one hour. Preheat oven to 375 degrees. Placed one of the chilled dough sections on a floured surface. Roll out the dough with a floured rolling pin, taking care not to overwork it. Cut the dough into desired shapes and place them 1/2 inch apart on a ungreased cookie sheet. Bake for 6-8 minutes until just golden brown. Cool on rack.
